Sauteed Haricots Verts

Haricot verts are simply thin French green beans. These delicate beans are more flavorful and tender and a perfect accompaniment to any dinner.

  • 2 handfuls Haricots Verts (French string beans)
  • 1 tablespoon extra-virgin olive oil
  • Salt and pepper to taste


  1. Place string beans in pot of boiling salted water for about 1 minute.
  2. Remove and place in ice water.
  3. Just before plating entrée, heat oil in saute pan then drain beans and place in hot oil.
  4. Toss with salt and fresh cracked pepper for about 2 minutes. Serve immediately.
