- 2 handfuls Haricots Verts (French string beans)
- 1 tablespoon extra-virgin olive oil
- Salt and pepper to taste
- Place string beans in pot of boiling salted water for about 1 minute.
- Remove and place in ice water.
- Just before plating entrée, heat oil in saute pan then drain beans and place in hot oil.
- Toss with salt and fresh cracked pepper for about 2 minutes. Serve immediately.
